Who is ready for the big game? We are home bodies so we normally enjoy game day from our couch in our PJs. Sometimes we might invite a few friends over and occasionally we are interested in the game (and not just the commercials) but we ALWAYS make this super easy 3 ingredient sausage dip.

This year, I am stoked because I have actually been following the Kansas City Chiefs quarterback, Pat Mahomes, given his previous role as the QB of the best college football team in the U.S., my Texas Tech Red Raiders.

Anyway, back to: the food. This sausage dip is ridiculously easy, yummy and versatile. It only has 3 ingredients: sausage, cream cheese, and rotel (also pictured: optional can of green chilis). And, here is something even better…it is low-carb and keto friendly!

Is This 3 Ingredient Sausage Dip Keto Diet Friendly?

Now, if you are following a low-carb or keto lifestyle and you are watching your dairy intake, this sausage dip might not for you. I have been following keto and have not cut out dairy completely, but I am trying to keep it on the lower side. Still, this dip is a nice treat for a special occasion (that won’t knock me out of ketosis). So, it’s on regular rotation for holiday or special occasion recipes around my house.

You can make it ahead and then just re-heat it when it is time to enjoy. It keeps for up to three days stored in a sealed container in the fridge and does nicely re-heated on the stove and then transferred to a crock pot set to warm.

Other Ways to Use 3 Ingredient Sausage Dip

IF you have any left (this is a big IF), you can:

  • Add to scrambled eggs
  • Pour over grilled chicken or hamburger patty
  • Mix in beans and rice and serve in tortilla
  • Serve over baked potato or pasta

A Word About the Ingredients for 3 Ingredient Sausage Dip

Sausage: Ok, so probably any breakfast sausage (plain or original, NOT sweet or maple) will do, but I really do love Jimmy Dean Sausage for this. They do NOT pay me to say this, it’s just my favorite and people always ask me what kind of sausage I use in this dip because it is delicious.

Cheese: Again, any brand of cream cheese is fine. But my preferred cheese is Philadelphia Cream Cheese. I have used the 1/3 less fat kind and it does well (but of course, the full fat version is best.) Again, no one is paying me to say that. It’s just my favorite.

Spice: My husband and I love spicy but my kids, not so much. So, I use mild Rotel tomatoes. Of course, use spicy rotel if that is your thing!

Why do I call this “3 Ingredient Sausage Dip” when the photo has 4 ingredients?

This is because the small can of green chilis are optional. You don’t have to add them, but they do kick it up a rung on the flavor ladder. I have made it with and without them and they are both delicious!

3 Ingredient Sausage Dip Recipe

This really could not be easier! First, brown the sausage in a large skillet over medium heat.

In the below photo, the meat is about halfway done. Before you add the cheese be sure to brown the sausage completely (there should be no pink pieces remaining.)

Note: You can certainly drain the grease before the next step, but I am sometimes known to leave it in!

Next, add cream cheese. I find it melts easier and more evenly when it is first cut into 1-inch chunks.

Finally, add the rotel and green chilis, pour into a smaller container (or you can put into a crock pot set to warm).

Serve with chips or veggies or eat with a spoon (I am not joking, it is something I do sometimes with this dip!).

Ingredients

  • 2 pounds breakfast sausage NOT maple or sweet
  • 64 ounces cream cheese Four 8-ounce boxes, chopped into 1-inch squares
  • 10 ounces Rotel tomatoes One can
  • 4 ounces chopped green chilis One small can, Optional

Instructions

  • Brown sausage in skillet over medium heat. Drain grease (OR be a rebel and don't). Add cream cheese, Rotel and green chilis (if adding) and stir until cheese melts and all ingredients are incorporated. Allow to simmmer on medium for 5-8 minutes. Pour into a crock pot set to warm (or leave on stovetop over very low heat). Serve with corn chips, tortilla chips, bell peppers, etc.

Notes

  1. Be sure to brown the sausage completely (no pink/red pieces left). 
  2. Cut the cream cheese into 1-inch squares before adding.
