This is truly a very simple and yummy snack or appetizer. A great starter to take along for a summer barbecue, beach picnic or while you are lounging poolside. Or enjoy them alongside these slow burn or cozy mystery reads.
- 12 black mission or brown turkey figs
- 1/4 cup blue cheese crumbles
- 4-5 tablespoons pistachios, shelled and rough chopped
- 4-5 tablespoons honey
Using a small pairing knife, trim the stem off the tops of the figs (if they have not already been trimmed). Make an X-like slit in the top (on the stem side) of the figs and squeeze them at the base so they sit open. Stuff with a few blue cheese crumbles, drizzle with honey and sprinkle pistachios over the top.
