This is a perfectly refreshing cocktail for sipping poolside in the summer. And it’s even better when paired with these dark and twisty thriller books.
- 1 bottle Champagne or Prosecco, chilled
- 1 cup watermelon puree (about 4 cups chopped watermelon), chilled
- 2 tablespoons lime juice (about 1/2 small lime)
Mint-infused simple syrup:
- 1 cup sugar
- 2 cups water
- Fresh mint leaves (about 4-5), rough chopped or torn into pieces
First, make mint-infused simple syrup by boiling 1 cup sugar mixed with 2 cups water and the torn mint leaves over medium heat in a small sauce pan for 3-4 minutes. Then, set aside and allow to cool (leftover syrup can be kept in a jar in the fridge).
Next, puree watermelon in a blender or food processor until smooth and juicy with no big lumps. Pour into a large jar or small pitcher and add lime juice and 1/8 cup mint-infused simple syrup.
To mix drinks, fill champagne or wine glass about a quarter full with the watermelon puree mixture and top off with champagne.
Note: You can double the watermelon puree recipe and keep in a large jar or small pitcher in the fridge. Then, for making additional drinks, simply pour it in a glass and top off with champagne.
