Growing up, my mom cooked pretty healthy. The food she made was not always low fat or low carb, but the ingredients were always fresh. Partially because it is healthier but mostly because she thought (thinks – she still cooks for me to this day!) it just tastes better. (It does.)
Being a single working mom, she frequently reached for recipes she could make quickly and have on the table for us after work while also making enough that we could have leftovers and alleviating the need for her to cook every single night. Of course, we all do this and having leftovers available for reheating remains, in my mind, one of the best and simplest strategies for keeping our families fed.
English Muffin Pizzas is one of those recipes my mom made on rotation when I was a kid and she still makes these today for her grandkids. When we had these the other night, my kids immediately recognized that this is the pizza they have at Gran’s house.
It is so simple, just slice the English muffins in half, assemble and bake for 10-15 minutes. We always make a simple marinara sauce but you can use your favorite jarred sauce.
English Muffin Pizzas
(my mom’s recipe – tastes like my childhood!)
- 1 package English muffins (6 muffins, sliced in half)
- 2 cups marinara sauce
Whatever you like! We use:
- Cooked lean ground beef
- Black Olives
- Sliced and/or fresh mozzarella
- Garlic Salt
- Dried Basil
Spread 1-2 tablespoons marinara sauce on half an English muffin. Top with desired toppings like shredded cheese, ground beef, olives, mushrooms, pepperoni, etc. Finish with fresh parmesan cheese and a sprinkle of garlic salt and dried basil. Bake at 375 degrees for 10-15 minutes.
